This is my husband’s favorite chicken marinade EVER! It does have some heat to it, which our family enjoys, so reduce the harissa paste if you don’t like spicy food. I get my Harissa Paste from Trader Joe’s but it’s available other places as well. I like to serve these chicken thighs with rice or naan, an Israeli Chopped Salad and Tzatziki Sauce.
To make this #dinnerdoneby9am I put the chicken in the marinade in the morning, refrigerate all day, then cook just before serving.
-2 lbs skinless, boneless chicken thighs
-1/2 c olive oil
– Tbsp brown sugar or honey
-1/4-1/3 c Harissa Paste
-juice of 1 lemon
-2 tsp salt
-1/2 tsp pepper
-1 tsp smoked paprika
-1/2 tsp cumin
Place marinade ingredients in a gallon ziploc bag and squeeze to mix well. Add chicken thighs, turning to coat. Refrigerate for 2-8 hours. Grill chicken for 6-8 minutes per side or bake at 425 for 30 minutes.
