This is the perfect accompaniment for my Chicken Gyros, Beef Gyros, Chicken Shwarma, or many other Middle Eastern meat dishes. This sauce will keep for 3-5 days in the fridge, so you can make it in advance if you like. If you prefer to regular (not Greek) yogurt you will need 2 cups and then need to strain it through cheese cloth for at least 2 hours prior to using.
-1 c plain Greek yogurt
-1 clove garlic, minced
-1/2 tsp salt
-1 tsp dried dill
-1 tsp red wine vinegar
-1/2 cucumber, peeled and seeded
Place cucumber in a food processor and pulse until finely chopped. Use a kitchen towel to squeeze out excess moisture.
In a small bowl, combine cucumber pulp with remaining ingredients, stir well. Chill at least 1 hour prior to serving.
