This is a great Summer meal, it’s light, healthy, fresh and fairly quick. If you prefer, the chicken can be grilled, rather than baked. Diced pineapple or peaches can be substituted for the mango.
Chicken
-1/4 c tequila
-juice of 1 lime
-2 Tbsp olive oil
-2 Tbsp honey
-2 Tbsp hot sauce (I like chipotle, habanero or jalapeno hot sauce)
-2 cloves garlic, minced
-1 tsp salt
-1 tsp smoked paprika
-1/2 tsp chili powder
-1/2 tsp black pepper
-2 lbs chicken breast
Fruit Salsa
-1 mango, diced
-1/4 red onion, diced
-1/2 bunch cilantro, chopped
-juice of 1 lime
-1 Tbsp hot sauce
-1/2 tsp salt
To marinate the chicken, stir together the tequila through black pepper. Add the chicken, turning to coat, then refrigerate 1-8 hours.
When ready to cook, plate the chicken on a baking sheet and bake at 425 for 30-40 minutes, until cooked through.
While the chicken cooks, in a small bowl, stir together salsa ingredients.
When chicken is finished cooking, rest 5 minutes, then top with fruit salsa and serve.
