Think fried rice, but using cauliflower rice and the addition of breakfast sausage to give it a slightly different (yet delicious) flavor profile. This meal is delicious anytime of day whether you serve it for breakfast, brunch or breakfast for dinner. You can absolutely make this with any type of cooked rice you prefer, I just happen to eat few grain and therefore opt for cauliflower rice when possible. I usually just use a packaged cauliflower rice and microwave it for this to keep the meal quick and easy, but you could certainly make and cook your own cauliflower rice.

-1 tablespoon vegetable oil
-4 large eggs, lightly beaten
-1 lb turkey breakfast sausage
-16 oz cooked cauliflower rice
-2 tablespoons soy sauce
-1 tablespoon brown sugar or honey
-1/2 cup frozen peas, corn and carrots, thawed
-3 scallions, sliced
-sriracha sauce for topping

Heat 1 tablespoon of the oil in a large nonstick frying pan over medium heat. Add the eggs and gently scramble with a spatula until just softly set, about 2-3 minutes. Transfer the eggs to a plate and set aside.
Add the sausage to the pan and cook, breaking up the meat with a wooden spoon, until the sausage is cooked through, about 5 minutes. Add the cauliflower rice and and thawed frozen vegetables, stir-frying until heated through, about 5 minutes. Add the soy sauce and brown sugar or honey and cook for 1 additional minute. Add the scrambled eggs and sliced scallions and serve.
