-2 lbs. red potatoes, scrubbed and chopped
-1/8 cup olive oil
-salt and pepper to taste
-2 tablespoons red wine vinegar
-1 tablespoon dijon mustard
-1/2 red onion diced
-handful of basil, sliced into ribbons

Boil potatoes until tender (about 15 minutes) and drain. Whisk together remaining ingredients in a bowl. Add warm potatoes and stir to combine.
