This is a knock off of a side dish I enjoy at a local Caribbean restaurant. 

To make this #dinnerdoneby9am I chop the mango and the green onions in the morning, refrigerate all day and make the rice just prior to serving.

-1 1/2 cup basmatti rice
-1 can coconut milk
-1 cup water
-1 tsp salt
-1 mango, diced
-(optional) green onions for garnish

Place coconut milk, water and salt in a medium pot. Bring to a boil. Add rice, reduce heat and simmer 20 minutes, or until all liquid is absorbed. Stir in mango and serve.
