-spring mix, spinach or lettuce
-6 scallions, sliced
-1/2 cup slivered almonds, toasted
-1 (14.5) oz can mandarin oranges, drained
-couple handfuls of shredded carrots

Dressing
-1/2 cup rice vinegar
-1/4 cup canola oil
-1/4 cup soy sauce
-1/4 teaspoon ground ginger
-1 clove garlic, minced
-2 teaspoons sugar

Assemble salad ingredients in large bowl. Whisk together dressing ingredients in small bowl (or put in a jar and shake). Drizzle dressing over salad and enjoy.
