This could be a side dish to your favorite meat, or served over rice for a gluten-free and vegan dinner.

To make this #dinnerdoneby9am I fully cook in the morning, refrigerate all day and reheat just prior to serving.

-1 Tbsp olive oil
-1 onion, diced
-1 (15 oz) can diced tomatoes
-1 tsp sugar
-3/4 tsp salt
-1/4 tsp black pepper
-1/2 tsp dried thyme
-1-2 Tbsp hot sauce
-1 lb fresh or frozen okra, sliced

In a medium pan, saute onion in olive oil over medium heat until soft (5-10 minutes).  Add tomatoes, sugar, salt, black pepper, thyme and hot sauce.  Stir well to combine, simmer 5 minutes.  Add okra, cover and simmer until okra begins to soften (5-10 minutes). Serve.
