We love BBQ Chicken Pizza and BBQ Chicken Quesadillas. These peppers are my attempt to enjoy the same flavors, but with the gluten removed.

To make these #dinnerdoneby9am I fully assemble the peppers in the morning, refrigerate all day, then bake just prior to serving.

-3 bell peppers, halved and seeded
-1 c BBQ sauce (we like this homemade one)
-2 c cooked chicken, shredded
-1 1/2 c shredded cheddar cheese, divided use
-1/2 bunch chopped fresh cilantro
-1 c cooked quinoa

Place peppers cut side down in a greased casserole dish. Bake at 400 for 20 minutes.

While peppers bake, in a large bowl, stir together BBQ Sauce, chicken, 1 c cheese, cilantro and quinoa.

Once peppers are cooked, spoon filling inside, top with remaining 1/2 c cheese and bake at 350 for 20 minutes.
