This is a quick, easy, crowd pleasing, few ingredient, comfort food meal that is to increase for crowds and pleases most picky eaters. I like to serve my Sloppy Joe in a baked sweet potato, but you can serve it on a bun for a more traditional approach.
To make this #dinnerdoneby9am I fully cook everything in the morning, refrigerate all day, then reheat prior to serving.
-1 Tbsp olive oil
-1/2 yellow onion, diced
-1/2 green bell pepper, diced
-1 lb lean ground beef or turkey
-3 cloves garlic, minced
-1 c tomato sauce
-4 Tbsp honey or brown sugar
-3 Tbsp Worcestershire sauce
-2 Tbsp tomato paste
-2 Tbsp yellow mustard
-2 Tbsp apple cider vinegar
-1 Tbsp hot sauce
-1/2 tsp salt
Heat oil in medium skillet over medium heat. Add onion and bell pepper, saute 5 minutes, stirring intermittently. Add meat, cook 10-15 minutes, until browned, breaking up meat with a spoon while cooking. Drain off fat, add garlic, cook 1 additional minute. Add tomato sauce through salt, stir well. Reduce heat, and simmer for 15 minutes, then serve.
