I took all the flavors of our favorite Jerk Chicken and packaged them into this super simple dump and walk away slow cooker soup that is slightly tangy, slight sweet and just a little spicy.
-8 c chicken broth
-1 onion, diced
-1 colored bell pepper, diced
-3 cloves garlic, minced
-1 teaspoon allspice
-1 teaspoon dried thyme
-1 Tablespoon sugar
-1/2 teaspoons ground sage
-1/2 teaspoon nutmeg
-1/2 teaspoon cinnamon
-1/4 teaspoon cayenne pepper
-1/4 cup orange juice
-1/4 cup soy sauce
-1 (15 oz) can black beans, rinsed and drained
-1 sweet potato, peeled and cut into bite-sized pieces
-2 chicken breasts
-Juice of 1 lime
– chopped cilantro for garnish
In a greased slow cooker, stir together the broth, onion, bell pepper, garlic, allspice, thyme, sugar, sage, nutmeg, cinnamon, cayenne, orange juice, soy sauce, black beans and sweet potato. Add chicken breasts, stir again. Cook on high for 4 hours or low for 6-8 hours, until chicken shreds easily using 2 forks. Remove chicken to a plate, shred, then return to slow cooker. Add lime juice and fresh cilantro and serve.
