This sheet pan meal is super quick and easy. You can serve the sausage and vegetables in buns with your favorite toppings, or you can slice the sausage up and serve everything over rice and pasta. You can use any type of sausage you like for this, but if not using fully cooked sausages you may need to increase the cooking time and check for doneness. I like to use some type of chicken sausage since that’s what our family prefers.

-4 Tbsp olive oil
-2 cloves garlic, minced
-1 tsp Italian seasoning
-1 tsp salt
-1/2 tsp pepper
-1 onion, sliced
-2 bell peppers (whatever color you prefer), sliced
-16 oz mushrooms, sliced
-1 package fully cooked sausage links

In a large bowl, whisk together olive oil, garlic, Italian seasoning, salt and pepper. Toss oil with sliced onion, peppers and mushrooms. Spread vegetables onto a greased sheet pan, then top with sausage links. Bake at 450 for 30 minutes, stirring halfway through. (Optional: If desired, broil for 5 minutes at the end to give everything a slight char.)
