This chicken could be made with whatever your favorite chip is, it just happens that Hot Cheetos are king in our house. I normally eat very healthy but tonight is Friday Family Fun Night so we’re mixing it up with all the crunchy processed cheese dust and making my kid’s dreams come true. I use my food processor to make the Cheeto crumbs, but you could easily use a ziploc bag and a frying pan to smash the Cheetos into crumbs.
-3 chicken breasts, fat trimmed, sliced in half lengthwise to make 6 thin cutlets
-1 cup Flamin Hot Cheetos crumbs
-2 tbsp butter, melted (or olive oil)
-cooking spray
Lightly brush the butter onto both sides of the chicken, then dip the chicken into the Cheeto crumbs, shaking off the excess. Place chicken on a greased baking sheet and repeat with the remaining pieces of chicken. Lightly spray a little more oil on top of each chicken cutlet and bake at 450 for 25 minutes, then serve.
