This soup captures all the flavors of classic Chicken Cacciatore, but in a super easy, slow cooker soup. If desired, serve this soup with parmesan cheese for sprinkling and crusty bread for soaking up the extra broth.
To make this #dinnerdoneby9am I put everything but the cream in the slow cooker and turn on. Then once the chicken is fully cooked I shred it, stir in the cream and keep warm until serving.
-6 c chicken broth
-1 (14.5 oz) can diced tomatoes
-1 (14.5 oz) can tomato sauce
-1 (6 oz) can tomato paste
-1 onion, diced
-1 bell pepper (any color), diced
-4 cloves garlic, minced
-16 oz mushrooms, sliced
-1 Tbsp Italian seasoning
-1/2 Tbsp sugar
-1/2 tsp salt
-1/2 tsp pepper
-1/4 tsp red pepper flakes
-2 chicken breasts
-1/4 c heavy cream
In a greased slow cooker, stir together the chicken broth, diced tomatoes, tomato sauce, tomato paste, onion, bell pepper, garlic, mushrooms, Italian seasoning, sugar, salt, pepper, red pepper flakes and chicken breasts. Cook on low for 6-8 hours or high for 4 hours, until chicken shreds easily using 2 forks. Shred chicken and return to slow cooker. Stir in heavy cream and serve.
