This recipe is slightly adapted from this one at The Schmidty Wifey. It is healthier and WAY easier than the traditional Chicken Cordon Bleu, yet was super delicious! This will definitely become a regular around our house, especially since EVERYONE like it (2 kids did request me to leave the mustard off of theirs next time though). Add a salad or some roasted vegetables to this chicken for a complete meal.

To make this #dinnerdoneby9am I assemble the chicken with the sauce, ham and cheese, but without adding the breadcrumbs, then refrigerate all day, and add the breadcrumbs and spray just prior to baking.

-2 Tbsp mayo
-2 Tbsp Dijon mustard
-1/2 tsp salt
-1/2 tsp pepper
-2 chicken breasts, sliced in half into cutlets
-8 slices ham
-6 slices Swiss cheese
-2 Tbsp seasoned breadcrumbs
-spray oil

In a small bowl, stir together the mayo, mustard, salt and pepper.

Cover a sheet pan with parchment paper, then lay the chicken cutlets across it. Divide the sauce into quarters, spreading it on evenly on top of each chicken cutlet. Arrange 2 pieces of ham on top of each cutlet, then top with 1 1/2 pieces of cheese. Sprinkle the bread crumbs over the cheese, then give them a light spray with cooking oil. Bake at 400 for 25 minutes, cool 5 minutes, then serve.
