This is about as easy and comforting as a meal can get. I like to serve it with pasta or spiralized veggies (butternut squash noodles are my fave), but any starch like couscous, rice, or roasted potatoes would work well with this dish.
-1 c pesto sauce
-4 boneless skinless chicken breasts, trimmed of fat, and each breast sliced into 2 or 3 strips
-1 c grape tomatoes
-1/2 cup shredded mozzarella cheese
Grease a 13×9 casserole dish with butter or oil. Spread 1/2 c pesto sauce across the bottom of the dish. Spread chicken strips on top of pesto. Spread remaining 1/2 c pesto on top of chicken. Sprinkle tomatoes on top of pesto. Cover dish with foil and bake at 375 for 30 minutes. Remove foil, sprinkle mozzarella cheese on top, then bake an additional 5 minutes. Finally, broil for 3-5 minutes until the cheese is a little browned. Let cool for 10 minutes, serve and enjoy.
