-1 bag frozen shelled edamame, cooked according to package directions
-1 Tbsp olive oil
-1 red pepper, chopped
-1 yellow onion, chopped
-2 cloves garlic, minced
-1 (15 oz) can corn, drained
-2 tsp dried basil
-1 tsp salt
-fresh ground black pepper
-2 Tbsp rice vinegar
Heat oil in skillet over medium heat. Saute onion and red pepper until soft, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add edamame, corn, basil, salt, black pepper and rice vinegar. Stir to combine, heat through, and serve.
