Cake balls are such a fun, delicious, single serving dessert. They are perfect for showers, parties and special occasions. You can follow this same method with any cake or icing recipe to suit your preferences.

Funfetti Cake
-1/2 cup butter, room temperature
-1 cup sugar
-2 whole eggs
-1 tablespoon vanilla extract
-1 1/2 cups flour
-1 teaspoon baking powder
-1/3 cup milk
-1/3 cup assorted brightly colored sprinkles

Vanilla Buttercream
-2 sticks of butter, softened
-2 1/2 cups powdered sugar
-1 tablespoon vanilla extract
-1 tablespoon of milk

Candy Coating
-1 package almond bark, white chocolate chips or candy melts
-extra sprinkles for topping

Funfetti Cake
Preheat oven to 350 degrees F. Cream butter and sugar in the bowl of an electric mixer until fluffy, about 3 minutes. Add eggs and vanilla and beat until combined. Combine dry ingredients in a bowl. Add half of the dry ingredients, mixing until just combined. Add the milk. Once mixed, add remaining dry ingredients. Fold in assorted sprinkles. Pour batter into a greased 8×8 square pan. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean. Set cake aside for several hours to cool.

Vanilla Buttercream
Cream butter in the bowl of an electric mixture until completely smooth and creamy. With the mixer on low speed, add in powdered sugar slowly. Gradually increase mixer speed and add vanilla and milk, then beat for 2-3 minutes, scraping down sides and bottom of the bowl. Set buttercream aside.

Cake Balls
Once cake has cooled to room temperature place it in the bowl of a stand mixer and turn on until cake is crumbled. Add 1/2 of the buttercream and mix until icing and cake are incorporated. Taste and mix in more icing if desired to achieve a sweeter, more moist cake ball. (I use about 3/4 of the entire buttercream mix). Once the cake and buttercream are mixed, roll the mixture into balls the size of a golf ball and place in the fridge for at least 30 minutes. Once the balls have chilled, melt candy coating according to package directions. Stick a toothpick in your first ball, roll in the coating allowing the excess to drip off, then place ball on a piece of wax paper and drop a few sprinkles on top. Repeat until all the balls are coated. Allow cake balls to set at least 30 minutes before serving, but they can be made up to 3 days in advance.
