This granola is delicious served in a bowl of milk or yogurt. It can be poured in a jar for a pretty gift also. My kids who don’t like nuts or coconut even eat this as a snack without picking out the coconut or almonds.
-2.5 c whole rolled oats
-1/4 tsp sea salt
-1/2 c sliced almonds
-1/2 c coconut flakes
-1/4 c coconut oil
-1/2 c honey
-1/2 tsp vanilla
-1/2 c chocolate chips
In a medium bowl, whisk together oats, sea salt, almonds and coconut flakes. In a small saucepan (or microwave), melt honey and coconut oil. Remove from heat and stir in vanilla. Stir wet ingredients into dry ingredients, and stir w. Spread mixture onto a baking sheet lined with parchment. Bake at 250 for 50 minutes, stirring every 10 minutes. After baking time, turn oven off, leaving granola in the oven, for 20 more minutes. Then cool granola on the counter 20 minutes, stir in chocolate chips, and store in an air tight container.
