I may be weird, but I actually prefer mashed cauliflower to mashed potatoes in most cases. mashed cauliflower is a great way to squeeze in more veggies into your diet. If you’re not crazy about the texture of just the cauliflower, you could try a mix of 1:1 cauliflower to potatoes.
To make this #dinnerdoneby9am I fully prepare the cauliflower in the morning, refrigerate all day, then reheat on the stove or in the oven at dinner time.
-1 large head cauliflower cut into florets
-2 Tbsp butter
-1/2 tsp salt
-1/4 tsp black pepper
-1-3 Tbsp milk or cream
Bring a medium pot of salted water to a boil. Add cauliflower and boil until tender, 10-15 minutes. Drain cauliflower. Place cauliflower, butter, salt and pepper in a bowl and mix on medium speed until pureed. Add milk/ cream, if needed, to thin the mixture out. Serve warm.
