I love these Energy Bars for breakfast, a quick snack, or a healthy dessert. These bars are so incredibly easy to make that you will never want to purchase the expensive store bought variety again. You can use any dried fruit of your choice instead of the prunes, or any nut of your choice instead of the almonds. These will keep for up to a month in the fridge.
-1 c prunes
-1 c dried dates
-1 c whole almonds
Combine ingredients in a food processor and turn on for 1-2 minutes, scraping down the sides intermittently, until all of the chunks are the size of crumbs and the mixture forms into a ball. Spread mixture into an 8×8 dish or form into balls. Refrigerate 1 hour, then serve cold, from the fridge.
