This is a great summer salad to serve for brunch, lunch or dinner. Romaine or spinach would also be a good green here. Kiwi, mandarin oranges or sliced almonds would also be great additions to this mix.
To make this #dinnerdoneby9am I assemble the salad and whisk the dressing and then refrigerate all day and dress the salad just prior to serving.
Salad
-butter lettuce
-peaches, diced
-strawberries, sliced
-blueberries
Dressing
-6 Tbsp mayo
-6 Tbsp olive oil
-3 Tbsp lemon juice
-3/4 cup sugar
-1/3 cup apple cider vinegar
-1 tsp salt
-1/4 tsp ground mustard
-1/4 tsp onion powder
-2 tsp poppy seeds
Whisk together dressing ingredients. Toss with salad ingredients.
