This is my go to classic Cole Slaw recipe. I serve it with pulled pork or chicken BBQ, or any picnic type food. I quickly shred the cabbages and carrot in my food processor, but you can do it by hand if you don’t have one. To make this a little easier, you can use one bag of cole slaw mix in place of the shredded cabbages and carrot.
To make this #dinnerdoneby9am I fully prepare the Cole Slaw in the morning, refrigerate all day, then serve at dinner time.
-1/2 cup mayonnaise or yogurt
-1 tsp salt
-1/2 teaspoon black pepper
-2 tablespoons sugar or honey
-1 tablespoon white vinegar
-1 tablespoon lemon juice
-1/2 small head green cabbage, shredded
-1/2 small head red cabbage, shredded
-4 green onions, thinly sliced
-2 carrots, shredded
-1/2 bunch parsley, chopped
In a medium bowl, whisk together mayo through lemon juice. Add remaining ingredients and stir well. Chill at least 1 hour prior to serving.
