To make this #dinnerdoneby9am I fully prepare the salad in the morning, refrigerate all day, then serve at dinner time.
-2 c cooked chicken, shredded or diced
-1 c mayo or yogurt
-1/2 c heavy cream
-juice of 1 lemon
-4 Tbsp curry powder
-3 Tbsp sugar or honey
-1 tsp salt
-1/2 tsp pepper
-1/4 tsp cayenne
-1/2 c dried cranberries
-2 stalks celery, diced
-1/2 c diced red onion or sliced scallions
-(optional) 1/2 c sliced almonds, chopped walnuts or pecans
-(optional) 1/2 bunch cilantro, chopped
-1 box rotini pasta, cooked to package directions
Whisk together mayo/ yogurt with cream, lemon juice, curry powder, sugar/ honey, salt, pepper and cayenne. Toss dressing with chicken and remaining ingredients. Chill at least 1 hour prior to serving.
