I like to serve these as a side dish for a meat entree, or over polenta as a vegetarian main dish.
To make these #dinnerdoneby9am I bake the mushrooms in the morning for 15 minutes instead of 20, refrigerate all day and reheat in the oven prior to serving.
– 16 oz mushrooms, cleaned
-1 Tbsp olive oil
-1/2 tsp salt
-1/4 tsp black pepper
-1 tsp dried rosemary
-3 cloves garlic, minced
-parmesan cheese for topping (optional)
-2 Tbsp balsamic vinegar (optional)
In a medium bowl, stir together olive oil, salt, pepper, rosemary, and garlic. Toss with mushrooms. Place mushrooms in greased baking dish. Bake at 400 for 20 minutes. (Optional) Top with parmesan and/ or balsamic vinegar and continue to bake until cheese melts.
