When you want a cheeseburger, but it’s bikini season- enter Cheeseburger Salad. I was inspired by the Cheeseburger Salad in the Pretty Dish Cookbook, but made a bunch of changes to suit our tastes, resulting in a flavorful and hearty salad with all the flavors of a cheeseburger, that even my non-salad loving husband has already requested I make again.
To make this #dinnerdoneby9am I prep chop all of the ingredients in the morning, cook and season the beef, and make the dressing, then refrigerate everything all day, and reheat the beef and set everything out just before serving.
Salad
-1 Tbsp olive or canola oil
-1 lb lean ground beef
-3 Tbsp ketchup
-1 Tbsp yellow mustard
-1 Tbsp Worcestershire sauce
-1 pint grape tomatoes, sliced in half
-1/2 red onion, sliced
-1 cup dill pickles, diced
-1 cup shredded cheddar cheese
-1/2 lb chopped romaine lettuce or bagged salad
Burger Sauce Dressing
-1/2 c mayo
-1/4 c ketchup
-3 Tbsp yellow mustard
-1 Tbsp relish
-2 Tbsp apple cider vinegar
-1/4 tsp fresh black pepper
Whisk together dressing ingredients, then set aside.
Heat oil in pan over medium heat, add beef. Cook, breaking up meat with a spoon, until the meat is browned, about 10 minutes. Drain off fat. Add ketchup, mustard, and Worcestershire, taste and add salt or pepper if desired.
Set up a bar with the beef, dressing and the remaining ingredients and let everyone assemble their own salads.
