Bagged cole slaw mix could be substituted for the cabbages and carrot. Cilantro and/ or bean sprouts would also be great in this salad, but I didn’t have any on hand.
SALAD:
-1 package whole wheat linguine, cooked and drained
-1/2 head green cabbage, shredded
-1/2 head red cabbage, shredded
-2 carrots, shredded
-5 scallions, sliced
-1 cup dry roasted peanuts
-2 tsp sesame seeds
DRESSING:
-juice of 1 lime
-6 Tbsp olive oil
-8 Tbsp soy sauce
-3 Tbsp sesame oil
-⅓ cups Brown Sugar
-1 Tbsp minced fresh ginger
-1 clove garlic, minced
-1/4 tsp red pepper flakes
Mix salad ingredients together. Whisk dressing ingredients together and pour over salad. Mix with tongs. Chill at least 2 hours prior to serving.
