I have been buying the processed bottled Sweet Chili Sauce for years, but today finally decided to make my own and it was SO easy that I have no idea why I waited so long. I thew it together in less than 15 minutes, with ingredients I already keep on hand. I love that I can use honey as a natural sweetener and control the spice and sweetness to suit our tastes! This will keep for a week in the fridge, so you can prepare a day or two in advance, if desired. The recipe also easily doubles if you need more than 1/2 c of sauce.

-1/4 c rice vinegar
-1/4 c honey or sugar
-1/8 c water
-1 Tbsp fish sauce
-1 Tbsp chili garlic sauce
-1 clove garlic, minced
-1/2 Tbsp cornstarch mixed with 1 Tbsp water

Combine all ingredients except cornstarch in a small pot over medium heat and simmer until sweetener dissolves. Stir in cornstarch mixture and simmer 5 additional minutes, stirring often. Cool and refrigerate sauce until using.
