You can serve these on buns or over brown rice as a vegan sloppy joe alternative, or as a side dish to pair with your favorite meat.
To make these #dinnerdoneby9am I dump everything in the slow cooker in the morning, cook on low for 5-6 hours, then turn to warm until serving.
-4 cups water
-2 cups brown lentils, rinsed
-1/2 tsp salt
-1 onion, diced
-15 oz can diced tomatoes (drained) or tomato sauce
-1 (6 oz) can tomato paste
-2 cloves garlic, minced
-1/2 cup ketchup
-1 teaspoon mustard powder
-1 tablespoon chili powder
-1/2 tsp cumin
-1/4 tsp red pepper flakes
-4 tablespoons molasses or honey
-2 Tbsp cider vinegar
Combine all your ingredients in the slow cooker. Turn on low and cook for approximately 5 hours, until lentils are tender and the mixture has thickened and absorbed most of the liquid. Once lentils are tender, turn slow cooker to warm until serving.
