This is a super quick, easy, light and healthy meal. For a complete tropical inspired dinner serve this fish with Coconut Rice (minus the mango since you already have it in the salsa).
Jerk Fish
-4 white fish fillets such as cod, halibut, tilapia or red snapper
-olive oil
-salt and pepper
-thyme
-allspice
-cayenne
Mango Salsa
-1 mango, diced
-1 small red onion, diced
-juice of 1 lime
-1/2 tsp salt
-1/2 bunch fresh cilantro, chopped
Place fish on a greased baking sheet. Brush each filled with olive oil. Sprinkle each fillet with salt, pepper, thyme, allspice and cayenne. Bake at 400 for 15 minutes, or until fish flakes easily with a fork.
While fish cooks, combine salsa ingredients in a small bowl and mix well.
Once fish is cooked, place fillets on a serving platter or dinner plates and spoon the Mango Salsa on top.
