This is my fuss-free and healthier approach to Bananas Foster showcasing the classic flavors of the dish, yet eliminating the excess sugar and the constant stirring. This recipe can easily be doubled and baked in a 9×13 pan to feed a crowd. I’ll eat these bananas plain as a dessert, but they are HEAVENLY served over vanilla ice cream.
-2 Tbsp melted butter or coconut oil
-2 Tbsp dark liquor (spiced rum, brandy, bourbon…)
-1 tsp vanilla extract
-1/2 tsp cinnamon
-4 bananas, peeled and cut in half lengthwise
In a baking dish, stir together melted butter/oil through cinnamon. Coat banana slices in the mixture, then arrange in pan. Bake at 350 for 10 minutes, then broil for 2-5 minutes to get a nice brûlée on top. Serve immediately as is, or over ice cream.
