Since this crumble is made with whole grains and is naturally sweetened it can double as a healthy(ish) breakfast or dessert. For dessert it is great served with a scoop of vanilla ice cream, or for breakfast you can serve it with a dollop of yogurt, if desired.
Filling
-4 large tart apples, peeled and diced
-1/4 tsp cinnamon
-1/8 tsp salt
-1 Tbsp maple syrup
Topping
-3/4 c whole rolled oats
-(optional) 1/2 c chopped pecans or walnuts
-1/4 c whole wheat flour
-1/2 tsp cinnamon
-1/8 tsp salt
-1/4 c maple syrup
-1/4 c melted butter or melted coconut oil
Grease a small casserole dish. Add filling ingredients, stirring well.
In a medium bowl, whisk together oat, nuts (if using), whole wheat flour, cinnamon and salt. Add maple syrup and melted butter or coconut oil, stir well. Spread topping over apples and press down with a spatula to flatten. Bake at 350 for 45-60 minutes, until the top is brown and firm. Let cool at least 5 minutes before serving.
