To make this #dinnerdoneby9am I fully assemble the salad in the morning and make the dressing, then refrigerate both separately all day and remove from the fridge and dress the salad just before serving.
Dressing
-1/4 c olive oil
-1/4 c lemon juice
-1 tsp salt
-1/2 tsp pepper
-2 Tbsp honey
-1 Tbsp dijon mustard
Salad
-1 c dry quinoa, cooked according to package directions
-a few handfuls of kale, torn into bite sized pieces
-1/2 c dried cherries
-1/2 red onion, diced
-2 oz crumbled goat cheese
-1/4 c walnuts
In a medium bowl, whisk together dressing ingredients. Toss the prepared dressing with the salad ingredients and serve.
