This soup has all the ingredients of my favorite lasagna wrapped into a meal that takes less than 30 total minutes to make. We loved this and will be eating it again soon!

To make this #dinnerdoneby9am I fully prepare the soup in the morning and mix the cheeses together, then I refrigerate everything all day and reheat just prior to serving, while I cook the pasta.

-1 Tbsp olive oil
-1 lb Italian turkey sausage
-1 onion, diced
-4 cloves garlic, minced
-4 c chicken broth
-1 (15 oz) can petite diced tomatoes
-1 (15 oz) can tomato sauce
-1 (6 oz) can tomato paste
-1 Tbsp Italian Seasoning
-1 Tbsp sugar or honey
-1/2 tsp salt
-1/2 tsp pepper
-1/4 tsp red pepper flakes
-1 c ricotta cheese
-1/2 c mozzarella cheese
-1/2 c parmesan cheese
-bow tie noodles, cooked according to package directions
-(optional) fresh parsley for garnish

Heat oil in a medium pot, over medium heat. Add sausage, cook 10 minutes, breaking sausage up with a wooden spoon while cooking. Remove sausage and set aside. Add onion to the pot, cook 10 minutes, stirring intermittently. Add garlic, cook 1 additional minute, stirring constantly. Add broth, diced tomatoes, tomato sauce, tomato paste, Italian Seasoning, sugar/honey, salt, pepper, red pepper flakes and cooked sausage. Bring to a boil, reduce heat and simmer 10-20 minutes.

While soup simmers. Stir together ricotta, parmesan and mozzarella.

Once soup is finished, place a handful of cooked pasta in each bowl, then ladle soup over top. Then place a generous dab of the cheese mixture on top of the soup, sprinkle with parsley (if desired) and enjoy.
