Not having grown up in the South, I wasn’t exposed to Pimento Cheese until my mid-thirties and I was completely shocked that I actually liked it. In this recipe I took the traditional Pimento Cheese and kicked it up a notch with a touch of spice and smoky flavor from Chipotle peppers. I like to serve the dip with an assortment of crackers and fresh vegetables for dipping. I grate my cheese directly in my food processer, then set aside, add the remaining ingredients, mix well, then pulse back in the cheese until everything is well mixed.
To make this #dinnerdoneby9am I fully prepare the dip in the morning, refrigerate all day, then remove from the fridge 3o minutes prior to serving.
-8 oz sharp cheddar cheese, grated
-4 oz cream cheese, room temperature
-1/2 c mayo
-1 chipotle pepper or 2 Tbsp chipotle hot sauce
-1/4 tsp salt
1/4 tsp garlic powder
-4 oz jar chopped pimentos, drained
Combine the cream cheese, mayo, chipotle, salt and garlic powder using a food processor or electric mixer. Stir in the pimentos and grated cheddar, then sere with desired accompaniments.
