-1 pound green beans, cut in half
-2 tablespoons olive oil
-1 onion, chopped
-2 portobello mushroom caps, halved and thinly sliced
-1 tsp salt
-1/4 tsp black pepper
-1/2 tsp thyme
-1/4 cup dry sherry
Bring a medium pot of salted water to a boil. Add green beans and simmer 5 minutes. Drain green beans and return pot to medium heat. Add oil and to the pan. Add onion and saute 5 minutes. Add mushrooms and saute 5 additional minutes, add green beans back to the pot. Heat green beans through and add salt, pepper and thyme. Add sherry and cook for 2 minutes, then serve.
