These are a great appetizer but our kids love them so much that I serve them as dinner sometimes- figuring they at least have all the food groups in one portable vehicle. You could use bread crumbs instead of stuffing and mix and chop by hand if you don’t have a food processor.
To make these #dinnerdoneby9am I prepare the balls in the morning, refrigerate all day (or you can freeze for up to 2 months) and then bake just prior to serving.
-1 (16 oz) package frozen spinach, defrosted, and squeezed of excess moisture
-3 c herb stuffing mix
-5 eggs
-1/2 c melted butter
-3/4 c parmesan cheese
-2 cloves garlic, minced
-1 tsp thyme
-1/4 tsp salt
-1/4 tsp cayenne
-1/2 tsp pepper
Combine all ingredients in a food processor and pulse until well mixed. Roll the mixture into balls, using about 1 Tbsp of the mixture per ball. Bake at 350 for 20-30 minutes, cool 10 minutes before serving.
