You won’t miss the bagel one bit in this salad that showcases all the flavors of the classic bagel with lox, but without the heaviness of all the carbs. I felt that I could actually taste the flavor of each individual ingredient more astutely without having it buried under a bagel. The amounts don’t really matter for this salad and can be adjusted based on your preference, either serve in bowl for one person, or spread the lettuce across a platter and top with the ingredients if you are feeding a group.

Salad
-romaine lettuce, chopped
-cucumber, thinly sliced
-red onion, thinly sliced
-avocado, sliced
-grape tomatoes, diced
-smoked salmon
-green onions, sliced
-capers
-Everything but the Bagel Seasoning

Dressing
-1 cup olive oil
-1/4 c lemon juice
-1/4 c white balsamic vinegar
-1/2 Tbsp Dijon mustard
-1 tsp sugar or honey
-1/2 tsp salt
-1/4 tsp black pepper

Whisk together dressing ingredients and chill until serving.

When serving, toss romaine with a liberal amount of dressing and place in a bowl or on a platter. Spread the other ingredients on top, sprinkling the seasoning over everything.
