This slaw is mayo-free, light, crisp, and pairs well with almost any meat. It’s a great dish to bring to a BBQ or potluck!

To make this #dinnerdoneby9am I fully prepare the slaw in the morning and refrigerate until serving.

Dressing
-1/4 cup olive oil
-1/4 cup lemon juice
-1 clove garlic, minced
-1 tsp dried oregano
-1 tsp salt
-1/2 tsp black pepper
-1/4 tsp red pepper flakes

Slaw
-1 bag (16 oz) coleslaw mix
-1 bunch parsley, chopped
-1 (2.25 oz) can sliced black olives
-1/2 cup banana peppers
-1/3 cup crumbled feta

In a medium bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, pepper, and red pepper flakes. Add remaining ingredients and toss to coat. Serve immediately, or refrigerate until serving (for up to 8 hours).
