I took the classic New Orleans Muffuletta Sandwich and turned it into a salad showcasing the flavors we all love, without all the heavy carbs and bread. This was so good I could eat it everyday.
Salad
-2 heads romaine lettuce, washed, dried and sliced
-1/4 red onion, thinly sliced
-4 oz sliced salami, cut into thin slices
-4 oz sliced sopressata, cut into thin slices
-4 oz sliced mortadella, cut into thin slices
-4 oz sliced Provolone cheese, cut into thin slices
-1/2 cup green olives, sliced
Dressing
-1/2 c red wine vinegar
-1/2 c olive oil
-2 Tbsp Dijon mustard
-1/2 tsp salt
-1/4 tsp black pepper
Either whisk dressing ingredients together in a bowl or shake them in a jar until well mixed, set aside.
Spread chopped romaine onto a serving platter or bowl. Top with remaining salad ingredients, then drizzle dressing over top.
