When I loved in Northern Virginia there was a restaurant named Sweetwater that I went to often after work. That was the same season in my life when I was learning to eat more healthy and make better choices, so I would often get their house salad. This is my take on my long lost salad that I haven’t had in over 15 years now.
To make this #dinnerdoneby9am I make the dressing and prep the veggies in the morning, assembling the salad in a bowl, then refrigerate everything all day, and dress the salad just prior to serving.
Salad Ingredients
-chopped romaine lettuce
-fresh corn, steamed or roasted, cut off the cob
-diced cucumber
-diced tomatoes
Ranch Dressing
-1/2 c mayo
-1/2 cup sour cream
-1 clove garlic, minced
-1 tsp sugar
-1/2 tsp salt
-1/4 tsp pepper
-2 tsp white vinegar
-1 tsp dried parsley
-1 tsp dried chives
-1/2 tsp dried dill
-1/2 tsp dried oregano
-1/4 c milk or buttermilk
Place salad ingredients in serving bowl.
Whisk together dressing ingredients. Toss desired amount of dressing with salad, or chill until serving.
