This easy and versatile salad is full of flavor and texture from a variety of good Italian ingredients. Since this salad is so hearty and filling it can totally be eaten as a meal, possibly paired with some good bread. You could swap out any of the briny ingredients with sundried tomatoes, hearts or palm or roasted red peppers to customize according to your own taste.

To make this #dinnerdoneby9am I wash, chop and prep all of the ingredients in the morning, refrigerate all day, then reheat just prior to serving.

Salad
-1 head romaine, washed and chopped
-baby fresh mozzarella balls
-banana peppers
-olives
-grape tomatoes, sliced in half
-quartered artichoke hearts
-pepperoni or salami, diced

Dressing
-1/4 c olive oil
-1/4 c lemon juice
-1/2 tsp salt
-1/2 tsp pepper

Whisk together dressing ingredients and set aside. Place salad ingredients in a serving bowl and toss with desired amount of dressing, then serve immediately.
