This meal got great reviews from my entire family. My husband said this might have been the best meal that ever came out of our pressure cooker. One of my kids asked if I could make this “chicken” again soon (at least he enjoyed it, even if he didn’t know what kind of meat it was).
-1 onion, cut into thick wedges
-1 corned beef brisket with spice packet, rinsed, fat removed
-4 cups chicken or beef broth
-1 small cabbage, cored, sliced into wedges
-4 carrots, peeled and cut into 3″ chunks
-1 lb baby potatoes, halved
Place onion in the bottom of a greased pressure cooker. Place beef on top of onion. Sprinkle seasoning packet over beef. Pour broth over everything. Seal, cook on manual at high pressure for 90 minutes. Natural release pressure for 15 minutes, then quick release remaining pressure. Remove beef to a serving platter and slice. Add potatoes, carrots and cabbage to the pressure cooker. Seal, cook on manual at high pressure for 4 minutes. Quick release pressure. Arrange vegetables on the platter around the sliced corned beef and serve.
