This is a quick and easy cheater Pho. Traditional pho would be made with a homemade broth made from bones that is much more rich and flavorful than this version, however, this version reduces the hands-on time to less than 30 minutes, as opposed to several hours for traditional pho.

Pho
-8 cups beef broth
-2 cloves garlic, peeled and cut in half
-1″ chunck ginger, peeled
-1 Tbsp fish sauce
-1 Tbsp sugar or honey
-1 lb mushrooms, sliced
-1 lb sirloin, brisket, flank or round steak, sliced super thin
-8 oz rice noodles, cooked according to package directions, OR raw zoodles

Garnishes
-1 c bean sprouts
-4 scallions, sliced
-1 jalapeno, sliced
-1 lime, quartered
-cilantro, basil and/ or mint
-sriracha and/ or hoisin sauce

Slow Cooker
In a greased slow cooker, stir together broth through sugar/honey. Stir in mushrooms and beef. Cooker on low for 4 hours, or until mushrooms and beef are cooked and tender. Remove chunks of ginger and garlic using a slotted spoon. Place cooked noodles or raw zoodles in serving bowls. Ladle broth, mushrooms and beef over top. Serve with your choice of garnishes.

Pressure Cooker
In a greased pressure cooker, stir together broth through sugar/honey. Stir in mushrooms and beef. Cover, seal and cook on manual at high pressure for 10 minutes. Quick release pressure. Remove chunks of ginger and garlic using a slotted spoon. Place cooked noodles or raw zoodles in serving bowls. Ladle broth, mushrooms and beef over top. Serve with your choice of garnishes.
