Who doesn’t love a classic meatloaf??? This version is a little more healthy than the average since it uses ground turkey instead of ground beef. I like to serve meatloaf with mashed potatoes or mashed cauliflower and a green veggie for a classic comfort food dinner. My husband likes to fry up the leftovers the next day for sandwiches. No matter how you eat this, you will love it!

To make this #dinnerdoneby9am I assemble the meatloaf in the morning, refrigerate all day, then bake just prior to serving.

-1 Tbsp olive oil
-1 onion, diced
-1 Tbsp tomato paste
-1/2 c chicken broth
-1/4 c worcestershire sauce
-1 tsp salt
-1/2 tsp pepper
-1/2 tsp dried thyme
-1 egg
-1/2 c bread crumbs or whole rolled oats
-2 lbs lean ground turkey
-1/2 c ketchup

In a skillet, over medium heat, saute onion in olive oil until the onion has softened (about 10 minutes). Remove from heat and add tomato paste, chicken broth, worcestershire sauce, salt, pepper and thyme, stirring until well mixed. Allow mixture to cool. In a large bowl, beat the egg with a fork. Stir in the cooled onion/ tomato paste mixture. Stir in the bread crumbs and ground turkey. Mix until well incorporated. Shape meat mixture into a loaf and place on a greased baking sheet. Spread ketchup over the top of the loaf. Bake at 325 for an hour to an hour and a half, or 160 degrees when tested with a meat thermometer. Let rest 10 minutes and serve.
