To make this #dinnerdoneby9am I place the chicken in the slow cooker in the morning, assemble the salsa and refrigerate it all day and pull everything out when it is time to eat.
-2 lbs chicken breasts
-1 onion, diced
-6 cloves garlic, mined
-2 Tbsp olive oil
-2 Tbsp liquid smoke
-4 Tbsp soy sauce
-zest and juice of 1 orange
-zest and juice of 1 lime
-1 Tbsp allspice
-1 Tbsp thyme
-2 Tbsp sugar or honey
-1 1/2 tsp sage
-3/4 tsp nutmeg
-3/4 tsp cinnamon
-1/4 tsp cayenne
-1 tsp salt
-1/2 tsp pepper
In a greased slow cooker, stir together onion through pepper. Add chicken breasts and use a spoon to coat with the sauce. Cook on low for 5-6 hours, or until chicken shreds easily with 2 forks. Serve with tortillas, tropical salsa and desired toppings.
Tropical Salsa
-1 pineapple or 2 mangoes, diced
-1 avocado, diced
-1/2 red onion, diced
-zest and juice of 1 lime
-1/2 tsp salt
-1/2 bunch cilantro, chopped
Stir together salsa ingredients and serve with chicken.
