This is a simple salad that pairs well with a variety of meals. The texture of the cucumber and avocado pair together nicely. You can toss a little arugula in with it all if you’re in the mood, or even some baby fresh mozzarella balls.

To make this #dinnerdoneby9am I chop the tomato and cucumber in the morning and make the dressing. Then I refrigerate it all day long and add the avocado and toss with dressing just before serving.

Dressing
-1/2 c olive oil
-1/4 c balsamic vinegar
-1 clove garlic, minced
-1 Tbsp sugar or honey
-1 Tbsp Dijon mustard
-1/2 tsp salt
-1/4 tsp black pepper
-1/2 tsp Italian Seasoning or dried basil

Salad
-1 cucumber, diced
-1 pint grape tomatoes, sliced in half
-1 avocado, diced

For the dressing, combine all ingredients in a food processor, blender, jar, or bowl and mix until everything is well incorporated.

Place salad ingredients in a bowl and drizzle with desired amount of dressing. Serve immediately.
