This dish is super easy, yet super delicious, everything bakes up hands-free while you do other things. I recommend going heavy on the jalapenos!
-2 c BBQ sauce (store-bought, or this homemade one)
-4 boneless, skinless chicken breasts
-1/2 c shredded cheddar cheese
-1/2 c shredded mozzarella cheese
-1/4 red onion, thinly sliced
-a handful of sliced pickled jalapenos
-1/2 bunch fresh cilantro, chopped
Pour the BBQ sauce into a greased baking dish, add the chicken breasts, turning to coat. Bake at 425 for 20 minutes. Remove dish from oven, sprinkle both cheeses over the chicken. Spread the red onion slices and jalapeno slices over the chicken. Bake an additional 20 minutes, until chicken is cooked through. Sprinkle with fresh cilantro and serve.
