These Chicken Fajita Bowls are a great way for grain-free eaters to enjoy all the flavors of Chicken Fajitas but without the tortilla. Bowl meals are all the rage these days and are so fun for everyone to create their own combination of their favorite ingredients. Something magical happens when you get the perfect bite with a combination of textures and flavors from all of the ingredients.
Fajita Chicken and Veggies
-4 Tbsp olive oil
-2 Tbsp chili powder
-1 Tbsp paprika
-2 tsp cumin
-1 Tbsp sugar
-2 tsp salt
-1 tsp pepper
-1/4 tsp cayenne
-6 cloves garlic, minced
-1 lb chicken breasts, cut into thin strips
-1 onion, sliced
-1 pack mushrooms, sliced
-1 colored bell peppers, sliced
-1 pack grape tomatoes
Additional Bowl Ingredients
-rice
-cooked cauliflower rice
-sliced avoacado
–guacamole
–salsa
-lime wedges
-chopped cilantro
-black beans
-sour cream
–Mexican street corn
–Chipotle Lime Crema
-cotija or cheddar cheese
In a large bowl, whisk together the olive oil through minced garlic. Toss with the chicken through grape tomatoes. Spread the veggie/ meat mixture into two greased baking dishes or sheet pans. Bake at 400 for 30 minutes, stirring halfway through. Put each pan under the broiler for 5-10 minutes to give it a good browning/ char.
Set up a bar with your desired bowl ingredients and let everyone assemble their own bowl.
