This meal is humble, straightforward, simple and yet oh so comforting and delicious. The pressure cooker takes care of all the work and produces meat that is so tender you’ll wonder how you ever cooked Beef Stew any other way.
-2 Tbsp olive oil
-1 lb beef stew meat
-5 c beef broth
-2 Tbsp Worcestershire sauce
-2 Tbsp tomato paste
-1 tsp thyme
-1 tsp rosemary
-1/2 tsp pepper
-1 onion, diced
-6 carrots, cut into large chunks
-1 lb baby potatoes, scrubbed and cut into large chunks
-3 cloves garlic, minced
-2 Tbsp cornstarch mixed with 2 Tbsp water
Place oil and beef in pressure cooker, turn to saute, hit start. Cook, stirring often, for 4-5 minutes, or until meat is browned. Add broth through pepper, stir well. Add onion through garlic, stir. Cover and seal pot. Cook on manual, at high pressure, for 20 minutes. Naturally release pressure. Turn to saute, stir in cornstarch, cook 5 additional minutes. Turn off and serve.
